Stay cool with a Spicy Hibiscus Sunrise

With the sun coming out, we’re all in need of nice cool drink. Here’s the recipe for an ECB Special; The Spicy Hibiscus Sunrise 🌺 🌅, made using Sweetened Hibiscus Juice by Spicegrove. This is a variation of the typical Madras cocktail, which is a mix of Vodka, OJ, and Cranberry Juice. In this recipe, the Cranberry Juice is substituted for ’Spicegrove Roselle,’ thus maintaining the tart contrast, while adding the drink’s spice blend to the flavor profile. The “Sunrise” in the name refers to the presence of Orange Juice. No grand stories there, just wanted to share a cocktail naming convention.

Ingredients: 📝
  • Tito’s Vodka
  • Ice
  • Orange Juice
  • Roselle + Ginger Hibiscus Juice by @spicegroveroselle

Directions: 👨🏻‍🍳
  1. Put ice in a glass.
  2. Four count or 2 OZ. Tito’s Vodka.
  3. 1 to 1 ratio or if you are so skilled, pour OJ 🍊 & Hibiscus 🌺 Drink by Spicegrove in together.
  4. Give it a stir to mix together!
  5. Garnish if desired with orange slice or cherry 🍒 and in the words of Chef Miles, “There you go baby!”

CROSTATA JAM PIE

You’ll need the following ingredients;
1/2 teaspoon salt
1 3/4 cups flour
1/2 cup sugar
1 teaspoon baking powder
1 egg and 1 yolk (room temperature), lightly beaten
1/2 cup butter, cubed (room temperature)
1 jar Jana’s Jammy jam

Start by whisking together the salt, flour, sugar, and baking powder in a bowl. Make a well and drop egg, yolk and butter into it. Remove dough to a flat surface and knead gently until the dough comes together and is soft, wrap in plastic and refrigerate for 30 minutes.

Pre-heat oven to 350° lightly grease and flour an 8 inch pie pan.

Remove from fridge and knead the dough a couple of times to soften it up again on a lightly floured surface. Roll out to 1/8" thickness.

Transfer to ungreased pie plate.  Trim the dish of any extra dough. Mold this dough into strips or fun shapes from cookie cutters, you’ll need them later.

Prick bottom of dough with fork. Fill the pastry shell with the jam, then cover the top with the extra dough to create a lattice finish or decorate it with your favorite shapes. Bake in pre-heated oven at 350° Fahrenheit (180° Centigrade) for 30-35 minutes until crust is golden brown.

Spicy wings 2 Ways

Super Bowl Sunday is on its way!
​Super Bowl Sunday is on the horizon, and that means it’s time to lay out the traditional snack trays. Whether you’re hosting the annual bash or just looking to bring a treat for your pals, nothing says “I’m ready for some Football!” like a plate of chicken wings. Here we offer not one, but TWO easy recipes for spicy oven baked chicken wings! Pick your favorite, or go all-out and do both! Just follow our easy shake-and-bake guide and you’ll be serving piping hot wings before you can say, “Come on ref, what are ya blind?!”

Prepping the Chicken Wings

Remove wings from packaging, rinse under cold water, then pat them dry with a paper towel. Place the wings in an airtight resealable bag. If you can’t fit them all in one bag, just divide them between two bags and split the marinade. Be sure the plastic bags are nice and thick, otherwise they could leak.

​Recipe 1: Savory Chipotle Wings

Ingredients:
  • Chicken wings - 12 to 14
  • White wine vinegar - 1 1/2 cup
  • Silly Chilly Serrano Chipotle - 1/2 cup
  • Dill weed - 1/2 tsp
  • Fresh garlic - 3 cloves, diced
  • Ground coriander 1/2 tbsp
  1. Dice garlic cloves, crush with flat side of knife. Add to the bag, along with Silly Chilly Serrano Chipotle Hot Sauce, Dill Weed, Ground Coriander, White Wine Vinegar to bag.
  2. Seal bag. Toss wings mixture to thoroughly coat wings.
  3. Open bag, carefully squeeze bag to remove air and reseal.
  4. Place sealed bag in the fridge for 1 hour. Place on plate or dish in case of leakage.

Recipe 2: Chrispy “Groov” Wings ​

Ingredients:
  • Chicken wings - 12 to 14
  • Groov Sauce 2/3 cup
  • Olive oil 3/4 cup
  • Ground Cumin 1 tsp
  • Tamarind Chutney 2 tbsp
  1. Add all ingredients to second bag.
  2. Seal bag. Toss wings mixture to thoroughly coat wings.
  3. Open bag, carefully squeeze bag to remove air and reseal.
  4. Place sealed bag in the fridge for 1 hour. Place on plate or dish in case of leakage.
Wings, 2 ways, getting baked!

Baking Wings

Remove bags from fridge. Preheat oven to 425 degrees.

On a baking sheet or pan, place 2 layers of parchment paper. Place wings on parchment paper, single layer, evenly spaced.

Bake for 30 to 40 min, or until wings are cooked through.

​Place wings on a serving platter with celery stalks, baby carrots, and other veggies. Serve and enjoy!

Chocolate Fruit Fondue for two

Valentine’s Day is a chocolate lover’s dream, and there’s no better treat for a loving couple than a Chocolate Fondue. It’s arguably the perfect dessert. It’s delicious, decadent, healthy(ish), and best of all; designed to be shared with that Special Someone!

For our Chocolate Fondue, you will need only a few ingredients:
  • 1 jar Sweet Ladybug Baked Goods Hot Fudge Sauce (or Salted Caramel Sauce for alternative) available on our online store.
  • Your favorite Fresh Fruit - Strawberries, Sliced Bananas, Sliced Apples, Pitted Cherries, etc
  • Optional (If you’re feeling naughty)
    • Cheese Chunks - Cheddar, Blue Cheese, or Brie (not too soft or crumbly)
    • Pound Cake, cut into cubes.

  1. Slice the fruits, cheeses and pound cake into chunks small enough to fit in your mouth, but large enough to hold together on the fork/skewer. Set aside for now.
  2. To start getting you chocolate sauce nice and runny, take the lid off the Hot Fudge sauce, and place opened jar in the microwave. Heat on HIGH for 30 seconds. (If you’re not a chocolate person, Sweet Ladybug Baked Goods also makes a Salted Caramel Sauce. Just substitute the sauces, and follow the directions as normal)
  3. Stir contents of the jar, and place back in microwave and heat on high again for 30 sec.
  4. If further heating is needed, place back in microwave and heat again in 10 second intervals, stirring in between. It may take more or less time depending on your microwave.
  5. To test if the sauce is ready, stir it with a spoon and lift it over the jar. If the sauce stirred like a thick liquid and has a slow, even drip off the spoon, that means it’s melted to perfection.
  6. Once sauce is evenly melted, pour it into a Fondue pot or a bowl. An ideal Fondue pot should be small and deep enough to ensure you can submerge your morsels, but not so small that it’s difficult for both of you to dip at the same time. Synchronized dipping is half the fun!
  7. Serve immediately, dip fruit and enjoy! TIP: If using a bowl and the chocolate begins to stiffen, place in microwave and heat on HIGH for 10 sec.
Sweet Ladybug Baked Goods Hot Fudge and Salted Caramel Sauce lend themselves very well to Dessert Fondue. They are made with simple ingredients and are naturally gluten free. If you enjoyed having it with your fondue, there are plenty of other delectable applications. Take it with you when camping for instant s’mores, dip strawberries in it for easy horderves at a party, or simply drizzle it over ice cream for a tasty treat.

Sweet & Smoky Pumpkin Stew

I LOVE pumpkin! 🎃 I'm a sucker for "Pumpkin Everything Season", when everybody is making pumpkin flavored and pumpkin scented. Pumpkin Lattes, pumpkin smoothies, pumpkin lotions, pumpkin candles, pumpkin everything! Pumpkin is one of my favorite vegetables. Its amazingly versatile (hence why its used in almost everything 😉). 

I met Sufia, owner of Silly Chilly Hot Sauce, in early October 2017. After tasting all three flavors I was inspired with the possibilities of recipes. People in general are often intimidated by Hot Sauce, afraid of the burn and potential hurt. While that fear is not unreasonable, they don't know what they are missing out on. 

So to help make Silly Chilly Hot Sauce feel more accessible, I wanted to share the recipes I used the Hot Sauce in. The following recipe is one of my favorite recipes for Fall, Pumpkin Stew with Apples and Chorizo. I loved the smoothness of the pumpkin balanced with the sweetness of the apples and spiciness of the sausage. I knew the Smoky flavor of the Serrano & Chipotle Hot Sauce would give it an extra kick.

Ingredients:
Meat of 2 medium sized pumpkins *
2 Gala Apples, cored and diced
2 Spanish Onions, diced
1 TBSP Butter
1 7 oz package of Chorizo Sausage
Pumpkin Pie Spice to taste
1 or 2 TBSP of Silly Chilly Serrano & Chipotle Hot Sauce
1 32 oz box of low sodium Vegetable Broth *
Salt & Pepper to taste
Shredded Parmigiano Reggiano or Shredded Cheddar

* Substitutions & Variations:
If you don't have fresh pumpkins to roast, use two 15 oz cans of Pumpkin.
You can use Beef or Chicken Broth as well


Directions:
  1. Preheat oven to 350 degrees
  2. Slice open your two medium pumpkins and scoop out seeds. Discard seeds. Place pumpkin with open side up in a baking dish with a ¼ inch of water and roast in oven for 1 hour or until tender. 
  3. While Pumpkins are roasting, core and dice your apples, onions and chorizo sausage.
  4. In a skillet on medium high heat, melt butter and saute diced onions until tender and slightly browned. 
  5. Once pumpkins are finished roasting, allow to cool. Scrape meat of the pumpkin from the skin. Discard pumpkin skin.
  6. Add pumpkin meat, diced apples, sauteed onions, and chorizo sausage to slow cooker. 
  7. Add broth, Silly Chilly Serrano & Chipotle Hot Sauce, salt, pepper, and pumpkin pie spice to slow cooker.
  8. Cover slow cooker and set to High for 6 hours
  9. Stir and ladle into bowls. Sprinkle Shredded Parmigiano Reggiano or Shredded Cheddar as desired. Add additional Silly Chilly Hot Sauce for more intense smoky flavor. 
  10. Let cool completely and store in refrigerator for up to 7 days, or freeze for future meals

Serves 4 to 6 people.
